Cooking oil is defined by Wikipedia as the "purified fat of plant origin, which is liquid at room temperature."

The two basic considerations with cooking oils are: how do they react to heat and how healthy are they. Smoke point is the temperature at which the oil starts to smoke and break down with possibly harmful effects and a change (for the worse) in flavour.
