Salad of witlof and radicchio with shavings of Heidi gruyere on a cheese biscuit
Cheese Biscuits
Ingredients and Method
80g tasty cheese, grated
80g Heidi gruyere, grated
40g Parmesan, grated
Pre-heat oven to 180 deg C (355 degrees F).
Combine cheeses and on a lightly oiled baking tray make 6 rounds about 10-12cm across
Cook for 5-10 minutes and cool on rack
Salad
Ingredients and Method
1-2 heads witlof, washed and dried
1 head radicchio
Tuscan extra virgin olive oil
balsamic vinegar
Heidi gruyere
salt and freshly ground pepper
Remove damaged and outside leaves from witlof and radicchio.
Slice finely, season and toss with oil adding a little balsamic to taste.
To serve
Place biscuits on plates. Put salad in centre and then top with some shavings of gruyere.
