Beetroot is usually boiled in Australia, UK and USA where it is often pickled and used in salads. In Italy it is baked whole then peeled and used as a vegetable. In France they are boiled or baked and used as a garnish for salads and game dishes.
The leaves are also edible and are excellent as salad vegetable.
